This is delicious to have as a side with my curries! Serves 3 to 4.
1 red onion
4 large, ripe tomatoes
4 sprigs of fresh parsley
25ml white wine vinegar
Grinds of black pepper
1. Finely chop the red onion and add to a bowl
2. Roughly chop the tomatoes and parsley and add to the onions
3. Sprinkle with salt
4. Grind some black pepper to taste
5. Add the vinegar and stir it all up
6. It ready to plate up!
Tip: I highly recommend that you make this to have alongside our delicious curries. It will add freshness, zing and lots of colour to your dish!
